Sweet Iron bits are known for the mild flavour of the mouthpiece. Moreover, the bits have an anatomical shape and come in a wide variety of shapes and sizes.
This bit with a double-jointed olive cheek features solid stainless steel rings and a mouthpiece made of mild iron with a blue "sweet iron" coating. The mild iron coating on the mouthpiece will encourage salivation. When this material reacts with moisture, warmth, and air in an oxidation process, the surface rust has a sweet taste. This promotes acceptance of the bit. Eventually, the blue colour fades, but the taste of the surface rust remains.
The anatomical design fits the shape of the horse’s mouth, thus creating a gentle and even distribution of pressure. With a double-jointed mouthpiece, the bit consists of three parts, with the middle part lying flat on the tongue. This creates more pressure on the tongue than a single-jointed mouthpiece. The thicker the central part, the stronger the pressure on the tongue. There are variants where the central part is equipped, for example, with rings to encourage chewing.

A bit with olive cheeks has rings that cannot turn freely, giving the aids a more direct effect. This type of bit is generally well accepted because the mouthpiece is relatively fixed in the mouth.
